Habits

Usually Wednesdays are baking days for me because my hubby goes for Aikido classes, so I would usually go home directly from work. It has become something like a habit. Yesterday I reached home a bit later as I had to run some errands but I still wanted to make something. Talk about ‘old habits die hard’. I was pondering what cakes can I make within such a short time(it was already 8pm)? Butter cakes? Butter is sitting rock solid in the freezer. Chiffons? Too many bowls to wash after that. Final decision….


These cakes are adapted from the same recipe used for the steamed mini chiffon cakes previously. Not too creative, I know, but shortage of time calls for ‘drastic measures’. I made a ‘heathier’ version this time, using all evaporated milk in place of coconut milk. It’s not intentionally, just that I don’t usually buy coconut milk unless I intend to cook curries.

To add a bit of variation, I made a bi-colored version. It’s a pity I didn’t add enough pandan paste, hence the pale green and so the colors didn’t really contrast well. But what matters really is that these cakes were ready within an hour and tastes good, not too sweet, soft and spongy.

Gattina, you are very observant, guess photography-related matters don't escape your eyes huh? I discovered a function on my camera over the past weekend, hubby was teaching me photography basics, finally he has the time and patience to do that(also to pass time in Ipoh.) I'm very happy, finally can do the 'object in focus, background blur' effect *lol*

hi angie, sorry 2 u bother u again. as u noe i made my 1st attempt bread and hv a few qns to ask u the expert =)

1. can leftover dough be kept in the fridge to later reuse? will it affect the texture/taste for chilled dough?

2. whats the difference btwn mixing yeast together with the rest of the ingredients to knead vs. dissolving the yeast in warm water until it becomes frothy?

SD, no worries, no trouble at all. Just to let you know that I didn't add ovalette, the cakes still turned out fine, though I dunno what would be the texture with ovalette.

Angie, is this supposed to open up on top like the Steamed Egg Cake? Me suaku. *lol*

Anyway, just share something that I have learnt about making the Steamed Egg Cakes open nicely if your kongfu is like Tazz (very lousy!!!!! *lol*) Irene from NK (a Malaysian) said to cut a cross, on the the batter, with an oiled knife. I made Steamed Egg Cakes last year. First batch was botah, 2nd batch came out nicely(with open top) with the method taught by her.

Hahaha... me long winded huh????
