What a Cool Dessert!

The dessert I'm talking about is cool - in two ways. First of all, it's really easy to prepare, 30 minutes(okay, the time could be shorter if I hadn't made a mess with the eggs) and they are on the way into the oven.

Alright, before I go any further, here's what I made:

Individual Orange Pudding Cake

This recipe is from Nic. She has made this recipe three times, so it must be really good. So when I saw her last attempt for Lime Pudding Cakes, I knew I had to give it a try. Also, I like the fact that this can be made into individual ramekins which allows me to use my new set of 4 ramekins.

This pudding cake is really interesting. As my spoon cuts through the soft, chiffon-like cake on the top, a smooth custardy pudding awaits beneath. Before I knew it, I had finished the entire cake and was reaching out for the second ramekin. So I quickly put the remaining two into the refrigerator ("see no evil"). When we ate them the next day, it was even better chilled. What a 'cool' way to round up our dinner.

Grace, I hope your cheek pain is much better, seeing that you can scream so excitingly :)

Ching, this is indeed yummy. But if you don't have such a sweet tooth, you might like to reduce the sugar. I decreased from 2 cups sugar to 1-and-a-half, but still find it a bit too sweet. Hubby found it just nice though.

*whoa* Looks so tempting!! Cant wait to try this out. Lol. But must get the ramekins cups first. Have been searching high and low for it but couldn't find though. Weird.

Also, the recipe calls for ap flour. I wonder if i can substitute that with other flour? Please advise.

You should be able to get ramekins at Ikea or places like Robinsons (I got mine from there) or CK Tang.

Actually AP flour is plain flour, which is easily available. I think cake flour should work fine too, though I've not substituted before.

Do give it a try, it's really nice :)

i was curious looking at the recipe and decided to do some testing of the orange pudding cake. somehow, it came out very nice indeed but i think hve to reduce the sugar - very, very sweet! will be making it again since my dd likes it very much.

It is called Lemon Delicious down here, a very old-fashioned pudding.
